Esther’s Mango Chutney 2 tbls. olive oil Heat the oil in a large skillet and sauté the onion until softened. Stir in ginger, mango, sugar, red pepper flakes, salt, water and vinegar. Bring to a boil, reduce heat and simmer for 30-40 minutes. Remove from heat and let cool. Chill until ready to serve. |
