Esther’s Mango Chutney

2 tbls. olive oil
1/2 cup chopped onion
3 tables. grated fresh ginger
2 cups chopped fresh mango
1/2 cup dark brown sugar 1/4 dried red pepper flakes (or more for hotter)
1/2 tsp. salt
1/2 cup water
1/4 cup white vinegar

Heat the oil in a large skillet and sauté the onion until softened. Stir in ginger, mango, sugar, red pepper flakes, salt, water and vinegar. Bring to a boil, reduce heat and simmer for 30-40 minutes. Remove from heat and let cool. Chill until ready to serve.
