Roasted Turkey With Herbs de Provence and Oranges

Turkey
Herbs de Provence (available at Art Effect)
Oranges sliced into very thin, full circles
Salt & pepper
Orange Juice

I will give you my preparations for the turkey. It is up to you whether or not you want to stuff it, which determines cooking time. Therefore, to decide on temperature and time, check with a good cookbook. I will tell you to out a foil tent over the bird for about 3/4 of the cooking time so the skin doesn’t burn. You want the skin golden with the shape of oranges showing through.

To begin, carefully pull the skin away from the flesh so that you can get your hand under the skin. Generously put the herbs under the skin all over the turkey. Place think slices of oranges under the skin over the herbs. Try to place in a symmetrical way as you will see the slices through the skin. Salt and pepper to taste. Add orange juice to the basting juices. Cook. Enjoy. Happy Thanksgiving-my favorite holiday!
