Esther’s Parmesan Crusted Chicken

6 tbs dijon mustard
1 tbs white wine or water
3/4 tsp salt
1/2 tsp pepper
6 boneless, skinless chicken breasts (pounded)
1 cup grated Parmesan
1 cup breadcrumbs
4 tbs melted butter
freshly ground pepper (to taste)

Whisk together first four ingredients, add chicken and marinate for at least 1/2 hour. Heat over to 450. Combine last four ingredients, use to coasts chicken. Place chicken on a rack on a baking sheet. Bake 25-30 minutes until crispy.
