Esther’s Mixed Green Salad with Camembert Cheese Croutons and Apples

Mixed greens enough for 6 people
2 red delicious apples dices
1 medium wedge Camembert cheese-room temperature
1 large cup croutons or crostini
4 tablespoons cider vinegar
4 tablespoons walnut oil
salt and pepper to taste
Optional - fresh roasted diced beets and/or maples walnuts

Soak apples slices in cider/walnut oil for 2 hours. Spread cheese on crostini. Toss all ingredients together and serve.
